Potato Chip Cookie Recipe
Yes, the delightful potato chip cookie. It sounds weird, but when you take that first buttery, crunchy, slightly salty, sweet bite, you will be hooked!
I use UTZ potato chips, but you could probably use any thin chip. My mom and aunt have been making these since I can remember!
- 2 Sticks (1 cup) butter, room temp
1/2 cup sugar
1 1/2 cup flour
1 tsp vanilla
1/2 cup mashed potato chips (Not pulverized, but crumbled)
1 egg
Preheat oven to 350
Cream butter in mixer. Add sugar, egg and vanilla and mix until fluffy. Add flour one tablespoon at a time until just combined, scraping down the sides as necessary. Fold in potato chips by hand with spatula or wooden spoon.
Drop by rounded teaspoon onto ungreased cookie sheet. Bake approx. 15 minutes, until the edges are golden brown. Let cool on baking sheet for a minute or two before removing to rack to cool, or they will crumble.
I had to make two batches because the first batch didn't come out right, so good luck! I have no idea how many cookies this makes. I think about 24. They're really good.

Yum!!!!!! They were always my favorite. Maybe I'll have to try my own now. Of course, my "baking" skills need a little help haha.

What an interesting little cookie. I'm sure I'd love them, though, since I love chocolate covered potato chips & people think those sound strange.

Wow...those sound really good!
My parents live in Hanover, PA - home of the Utz factory! We went on a factory tour over the holidays and it was pretty wild to see how many chips they churn out in a day. We even got free chip samples!
I may have to try these... :)
